Product Details

Matured for over 18 months in the ancient limestone caves of Somerset, this raw milk Vintage Cheddar is the pinnacle of patience and craft. Its long rest brings forth a dense, crumbly body and a flavour that hums with depth — sharp, nutty, and intensely savoury.

Each wheel is clothbound and turned by hand, left to breathe naturally in the cool cave air until it achieves its signature bite and crystalline texture. This is cheddar at its most expressive — mature, wise, and wonderfully alive.
